9 Large eggs
1/4 c Milk
Salt, to taste
Pepper, to taste
2/3 c Chopped garlic sausage
1 Medium zucchini, shredded
1/4 c Diced red pepper
1/4 c Chopped green onion
1/2 c Grated cheddar cheese

Grated cheddar cheese In a large bowl, whisk eggs until combined. Whisk in milk, salt and pepper. Stir in sausage, zucchini, red pepper, green onion and cheese. Fill 12 greased muffin cups. Bake in 400°F (200°C) oven for 25 to 30 minutes, until tops are golden. Let stand in pan for 5 minutes before removing to a wire rack to cool. Makes 12 egg cups.
