Zucchini Sauce

7oz Pantene sun dried tomatoes
~1.3 lbs yellow onions
2 heads of garlic
3lbs zucchini / squash
6oz baby spinach
fresh basil
2 lemons
Balsamic glaze (modenaceti)
EVOO
Salt, pepper, paprika, italian seasoning

Preheat oven to 400deg
Thinly slice squash, dice the onions, and chop the basil
Oil large baking dish and add the squash, onions, basil, spinach, sun dried tomatoes and its oil, EVOO fresh lemon juice and mix
Seasoning with salt, pepper, paprika, and italian seasoning
Chop the tops of both garlic heads off and add to dish. Douse heads in olive oil
Drizzle on balsamic glaze
Cover with aluminum foil
Bake for 30 mins
Mix the dish, then bake uncovered for an additional 15 mins until done
