2 c Quartered baby potatoes

1 tsp Cooking oil
1 lb Boneless fast-fry pork chops, cut into 1 inch (2.5 cm) pieces
1/2 tsp Salt
1/4 tsp Pepper
1 tsp Cooking oil
1 cup Chopped onion
1 tsp Chili powder
1/2 tsp Ground cumin
1/4 tsp Dried oregano
1/4 tsp Garlic powder
1 Can of diced tomatoes (14 oz., 398 mL), with juice
1 1/2 Chopped green pepper
1 c Prepared chicken broth
1 Can of tomato sauce (7 1/2 oz., 213 mL)

Put potato into medium microwave-safe bowl. Add water. Microwave, covered, on high (100%), for about 8 minutes until tender. Cover to keep warm.
Meanwhile, heat first amount of cooking oil in Dutch oven on medium- high. Add pork. Sprinkle with salt and pepper. Cook for about 5 minutes, stirring often, until starting to brown. Transfer to plate. Cover to keep warm.
Add second amount of oil to same pot. Add next 5 ingredients. Reduce heat to medium. Cook, uncovered, for about 5 minutes, stirring often, until onion is softened.
Add remaining 4 ingredients, pork and potato. Stir. Bring to a boil. Cook, covered, for about 5 minutes until green pepper is tender.
