Sausage Gravy

1 lb Breakfast Sausage
4 tbsp Butter
1/3 Cup All Purpose Flour
2 ½ Cups Whole Milk
1-2 tsp Salt and Pepper to taste
Red Pepper Flakes or Cajun Seasoning, optional

Brown your sausage in a skillet over medium heat. Once it is fully cooked add in the butter and melt it down.
Stir in the flour a little bit at a time, stirring constantly. Once you have it all added in, cook for about 5 minutes to get the raw flour taste cooked out.
Bring the heat to low/medium. Now slowly pour in the milk, stirring constantly.
Keep stirring until it comes to a boil then remove it from the heat. This is when it is going to get thick. Season with salt and pepper and the red pepper flakes if desired. Start slow with the salt. You can always add more but you can't take away! Just season it until you get it to your desired taste.
If you want it thinner, you can add more milk.
Serve over biscuits or toast or use in any of your favorite breakfast recipes!
