Pat Guzzo's Mexican Fajitas

Składniki

• 2 tbsp fresh squeezed lime juice

• 2 tbsp olive oil

• 1 large garlic clove minced

• 2 tsp cumin

• 1 tsp salt

• 1 tsp chili powder

• Lots of fresh chopped cilantro

• 4 boneless chicken breasts

• 3 large bell peppers cut into strips

• 2 onions cut into strips.

Wskazówki

1. Mix the lime juice, spices and herbs in a large bowl and add chicken breasts coating well.

2. Heat a deep skillet and add the chicken breasts. Sear the chick until blackened and turn over and do the same. About 6 minutes a side.

3. Put on parchment paper and on a cookie sheet. Bank in oven at 400°F. for 25 minutes.

4. Then use the same skillet (do not wipe down as vegetables will soak up the flavours of the seared chicken mix) and fry up peppers and onions until soft.

5. Slice chicken up into thin slices and add to skillet and stir into peppers and onions.

6. Serve with warmed wraps, salsa, sour cream and shredded cheese. Serves 4.
