Garlic Steak Breakfast Burrito

40oz Lean Steak (Top Round or Skirt) (1135g) 3 Tbsps Garlic Salt (45g)

3 Tbsps Minced Garlic (35g)
20 Eggs (~1200g)
1 Cup Cottage Cheese (0% Fat) (224g)
1.5 Cups Fat Free Cheddar Cheese (168g) Fresh Chives (25g)
10 Tbsps Hot Sauce (150g)
10 Low Calorie Tortillas (10-inch Carb Counter)
Instruções
1. Dice 40oz of lean steak into 1-inch pieces. Transfer them to a large bowl.
To the same bowl, add 2 Tbsps each of black pepper and garlic salt. Mix until the steak is coated evenly in the seasoning.
2.In small batches, transfer the steak pieces to a pan and cook them on high until golden brown.

When the steak is almost done, throw in 1 Tbsp each of light butter and minced garlic. Mix
them around until the butter melts and all pieces are coated. Repeat the process until you
cooked all of the steak.

In a clean bowl, crack 20 eggs. Add 1 Cup of blended cottage cheese (or Greek yogurt).
Whisk until everything is completely combined.

To a pan on low heat, add the eggs and slowly cook them while constantly stirring. When
the eggs are 80% cooked, add 1.5 Cups cheddar cheese, fresh chives, and 1 Tbsp garlic
salt. Stir it all together until the cheese is melted.
6.
Assemble the burritos with a low calorie tortilla, about 1/10 of the eggs, 1/10 of the cooked
steak, and a drizzle of hot sauce.
7.
Roll everything into a burrito and repeat the process 9 more times to make a total of 10
burritos. Wrap in aluminum foil and store in the freezer for up to 3 months (go to page 6 for
reheating instructions).
