House Lo Mein

10 oz dried lo mein egg noodles
2-4 tbsp cooking oil (I prefer avocado oil)
3 boneless skinless chicken thighs (sliced thin)
8 oz sirloin (or other tender beef cut) (sliced thin)
1 lb shrimp (peeled and deveined)
1 medium carrot (cut in half lengthwise and sliced thin)
6 spears asparagus (cut into bite-sized pieces)
1 bell pepper (sliced into thin strips)
¼ onion (sliced thin)

¼ - ⅓ cup sliced green onions
Sauce ingredients:
½ cup chicken stock or broth
6 tbsps oyster sauce
6 tbsps soy sauce
2 tsp sesame oil
4 tsp minced garlic
2 tsp minced ginger
2 tsp sugar
Instruções
Cook the lo mein noodles per package instructions, and drain. Set cooked noodles to the side. *Be careful not to overcook the noodles, because they will cook again on the griddle.
Preheat griddle on low to medium for several minutes.
While the noodles are boiling, make the lo mein sauce by whisking all sauce ingredients together in a medium bowl. Set sauce to the side.
Add a few tablespoons of cooking oil to the griddle and spread it around with your spatula. Add sliced vegetables to the hot griddle and begin sautéing them together. Then, immediately add the sliced chicken to the other side of the griddle to start cooking. Cook the vegetables and chicken separately for about 4-5 minutes, stirring occasionally.
When chicken is about 75% done cooking, move it to the side of the griddle and start cooking the steak. When the steak is about 75% done, move it to the side of the griddle with the chicken, and scrape down the center of the griddle to create a clean spot for the shrimp.
Add the peeled and deveined shrimp to the center of the griddle and sauté until about 75% cooked through. Then, combine the shrimp, beef, chicken, and vegetables and sauté them all together for about 2-3 minutes. Move the meat and vegetable mixture to the side of the griddle.
Add the cooked lo mein noodles to the griddle, and gently sauté them for about 2-3 minutes to loosen them up as they're heating. *You can add about a few tablespoons of the prepared lo mein sauce to the noodles to help loosen them up if needed.
Combine the lo mein noodles, meats, and vegetables. Sautee everything together briefly, then slowly pour the lo mein sauce over the lo mein. Mix sauce and other ingredients together. Allow the lo mein to cook for about 2-3 minutes, stirring frequently so the noodles absorb the sauce.
Right before the lo mein is ready to take off the griddle, sprinkle in the sliced green onions. Gently stir to combine.
Transfer lo mein to a serving platter, sprinkle with additional green onions for garnish, and serve.
