Onioned Butter Rice

Ingredients: serves 4
1 onion, finely sliced
3 tbsp butter
2 cups uncooked rice
4 cups vegetable stock
2 tap salt
pepper to season
1 tbsp ground turmeric
fried shallots
1) Fry your sliced onions in butter for 5 minutes in a saucepan. Your onions will caramelise and your butter will brown.
2) Then toss your uncooked rice in and make sure every grain is well coated. Transfer to a rice cooker if preferred.
3) Add your vegetable stock and seasonings. Cook on a normal rice setting, or with the lid on if on the stove top.
4) Serve hot and garnish with fried shallots.
