3-4 bunches or 5-6 beets with greens
3 cans (14 oz each) broth
2 oniors, chopped
1c white vinegar
1 bay leaf
Salt and Pepper
10 pepper corns
Sour cream (optional)
Pulled pork or extra ham & ham bone
Instruções
In Lg pot combine ham + ham bone, onion, bay leaf, peppes corns, vinegar, broth and 2-4 cups of water. Simmer all day all on low setting. Pull out the ham & hambone to cool and debone. Skim film from soup. Scrub beets, cut off leaves, use a peeler on beets then put in the pot & boil in pot till tender. Remove beets from pot & cool. Dice beets and return to pot. Return cleaned & deboned meat to pot. Clean beet leaves, pull apart the leaves & transfer back to pot. cook soup on low till leaves are tender, serve.
optional serve with sour cream.
