Albóndigas Soup Recipe 🥣
For the Tomato Base:
3 tomatoes 🍅
1 piece of onion 🧅
3-4 garlic cloves 🧄
2 chipotle peppers 🌶
2 tbsp chicken bouillon 🐓
Salt, to taste 🧂
1 cup water 💧
For the Soup:
6 cups water 💧
2 carrots, chopped 🥕
2 squash (zucchini or Mexican squash), chopped 🥒
1 bag small golden potatoes, halved 🥔
For the Albóndigas (Meatballs):
1 lb ground beef 🍖
1/2 cup rice 🍚
2 tbsp cilantro, chopped 🌿
2 eggs 🥚
Onion, finely chopped 🧅
Salt & pepper, to taste 🧂
1/2 tsp garlic powder 🧄
1/2 tsp oregano 🌱
1/2 tsp cumin ✨
To Serve:
Red rice 🍚

First, chop all your veggies—carrots, squash, and small golden potatoes—so they’re ready to go. Next, blend the soup base by combining tomatoes, onion, garlic, chipotle peppers, chicken bouillon, salt, and water until smooth. Pour the base into a large pot, add water, and let it simmer while you prepare the meatballs. For the meatballs, mix ground beef, rice, cilantro, eggs, finely chopped onion, and seasonings, then shape them into small balls. Once the soup base is boiling, gently drop in the meatballs and let them cook. After about 20 minutes, add the potatoes and carrots, letting them soften. Lastly, toss in the squash and let everything simmer until tender and perfect.
