15-Minute Spicy Ramen

3 (3 1/2-ounce) packages ramen noodle soup mix (such as Nissin), seasoning packets discarded
1/4 cup reduced-sodium chicken broth
1 tablespoon plus 2 1/4 teaspoons reduced-sodium soy sauce
1 tablespoon canola oil
1 tablespoon light brown sugar
2 teaspoons rice vinegar
2 tablespoons toasted sesame oil, divided
1 1/2 teaspoons crushed red pepper, divided
1 tablespoon finely chopped garlic
1 teaspoon grated fresh ginger
1/2 cup sliced scallions
Instruções
Bring a large pot of water to a boil over high heat. Reduce heat to medium, add ramen noodles and simmer, stirring occasionally, until the noodles are tender, about 4 minutes. Reserve 1/2 cup cooking water; drain the noodles and rinse under cold water.
Meanwhile, stir broth, soy sauce, canola oil, brown sugar, vinegar, 1 tablespoon sesame oil and 1 teaspoon crushed red pepper together in a medium bowl until the sugar dissolves.
Heat the remaining 1 tablespoon sesame oil in a large nonstick skillet over medium heat. Add garlic and ginger; cook, stirring constantly, until fragrant, about 1 minute. Add the broth mixture; bring to a simmer over medium-high heat. Add the noodles and the reserved cooking water. Cook, stirring constantly, until the noodles are coated in sauce, about 1 minute.
