Peanut Satay Chicken Salad Cups

3 Persian cucumbers, thinly sliced
1 cup rice vinegar
3 tbsp coconut sugar
1/4 tsp red pepper flakes
1/2 tsp salt
4 cups cooked chicken
1 cup purple cabbage, shaved
1/2 cup carrots, thinly sliced
1/2 cup cilantro leaves, chopped
1/3 cup green onions, thinly sliced
1/3 roasted peanuts, roughly chopped
1/3 cup creamy peanut butter
1/3 cup coconut yogurt, plain and unsweetened
1 tbsp tamari
1 tbsp unseasoned rice vinegar
1 tbsp red curry paste
1 tbsp honey
water to thin if needed
For serving: green cabbage leaves
Instruções
Make a quick Asian pickle by adding your cucumbers, rice vinegar, coconut sugar, salt, and chile flakes and stir to combine. Set aside for at least 15 minutes
To a small bowl, add your peanut butter, coconut yogurt, tamari, rice vinegar, curry paste, and honey and stir to combine (thin with a little water if your peanut butter if needed)
To a large bowl, add your chicken and peanut satay sauce and stir until your chicken is evenly coated
Add in your cabbage, carrot, green onion, cilantro, and roasted peanuts and toss
Serve by itself or with cabbage cups
