Chicken Skewer

Ingredientes

Cilantro lime chicken skewers + cilantro lime rice + corn peach avocado salsa

Marinade (this was enough for 6 chicken breasts):

1 ½ cups Greek yogurt

Zest of 2 limes

Juice of 2 limes

10 cloves garlic, minced

1 jalapeno, diced

Large bunch of cilantro, chopped

Large bunch of chives, chopped

1 tsp salt

1/2 tsp pepper

1 tsp garlic powder

1 tsp onion powder

A few tbsp of hot sauce

For the basting sauce, I mixed up a little of the following:

Olive oil

Lime juice

Lime zest

Garlic

Cilantro

Hot sauce

Salt and pepper

Instruções

I cut some chicken breasts into large chunks. I threw in a bowl with all marinade ingredients, and let it sit in the fridge for about an hour (can do longer if desired) before adding to some skewers. We grilled them on medium/high heat for about 10 minutes total, flipping halfway through (until the meat thermometer read 165). In the last minute or so on the grill, baste with the basting sauce.

Salsa:

2 peaches, diced

2 ears corn, boiled and kernels cut off cob

2 red bell peppers, diced

2 avocados, diced

1 shallot, diced

3 tbsp cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste
