Honey Roasted Feta and Pepper Pasta

Ingredientes

Oven bake:

1-2 bell peppers, sliced

1 red onion sliced

1 package cherry tomatoes sliced in half

1 block of feta

Smashed or diced garlic cloves

Olive oil

Salt and pepper

Honey

Toppings:

1-2 Tbsp diced

1/4 cup green olived sliced/diced

handful of basil sliced

Chili flakes

Pasta:

Dealers choice (recipe used rigatoni)

Instruções

1. Preheat oven to 410F

2. Add bell peppers, onions, garlic, and tomatoes to a 8x8 oven safe dish. Drizzle with olive oil and mix so evenly coated. Add in whole block of feta on top. Season with salt and pepper, then drizzle healthily with honey (maybe two drizzle passes)

3. Place in oven and bake for 25-30 minutes

4. Chop up toppings (capers, green olives, basil) and set aside.

5. Cook pasta to box specifications

6. Remove bake and mix with the pasta. Add toppings on top with chili flakes to taste

7. Can be eaten cold as a pasta salad, in which case set aside to let cool before adding toppings. Or can be eaten hot (I recommend)
