Stuffed Bell Peppers

4-6 bell peppers
1lb ground turkey
1 red onion, chopped
2 cloves garlic, minced
14oz can diced tomatoes
1 cup rice, cooked
1/2 cup cheddar cheese, shredded
1/4 cup parmesan, grated
Olive oil
Salt & pepper
Garlic powder
Italian seasoning
Instruções
Cut your bell peppers in half, remove seeds and veins. Spray or gently brush peppers with a thin layer of olive oil and bake for 10 minutes at 350°.
Add your red onion, garlic and ground turkey to a pan and season generously with S&P, garlic powder, and Italian seasoning. When meat is fully cooked add in the diced tomatoes, rice, cheddar chesse, parmesan and stir until combined. Spoon your filling into the bell peppers, sprinkle with a little extra shredded cheese on top and cook until cheese is melted, about 10 minutes.

4.6. For a quicker option you can just dice your bell peppers, saute in the pan and combine with meat filling!
Perfect for a festive Halloween dinner! Cut the tops off the bell peppers (set aside) remove seeds and carve peppers like Jack-o-lanterns. Stuff with meat filling, place bell pepper tops back on and cook in oven.
