Sheet Pan Salmon With Asparagus & Roasted Smashed Potatoes

Ingredientes

2 salmon fillets

1 lemon

Mini potatoes

Asparagus

Olive oil

S&P

Lemon pepper

Garlic powder

Parmesan cheese

Instruções

Start by boiling your potatoes in a pot with heavily salted water. Boil for 25-30 minutes, once soft add to a lined baking sheet and use the bottom of a measuring cup to push down and smash the potatoes. Drizzle with olive oil and Salt & pepper, then bake at 450° for 20 minutes.

Trim your asparagus and marinate with olive oil, lemon juice, S&P and garlic powder.

After the 20 minutes are up, remove potatoes from oven and turn temperature down to 375°. Add your salmon and asparagus to baking sheet. Brush salmon fillets with olive oil and season with lemon pepper, garlic powder and lemon slices on top. Bake for another 15-20 minutes until salmon is cooked through. Once finished sprinkle everything with Parmesan cheese and bake at 400° for 10 minutes.

After everything is finished I like the throw the salmon on a skillet to crisp it up a little. Plate & enjoy!
