Chicken Kathi Rolls

Ingredients

6 boneless, skinless chicken thighs

1.5 teaspoons of salt

juice from 1/2 lime

2 teaspoons of ground cumin

1 teaspoon of cayenne pepper

1/2 teaspoon of turmeric

2 teaspoons of freshly ground black pepper

4 cloves garlic, crushed

1-inch knob of ginger, crushed

2 teaspoons of tomato paste

1/3rd cup of plain Greek yogurt

4 frozen parathas (or naan, see note 1)

mint cilantro chutney (see recipe)

1 cucumber cut into thin strips

1 red onion sliced thinly

ghee or olive oil

Directions

- Begin by slicing the chicken thighs into bite size pieces. Place them into a mixing bowl off to the side.

- In a pestle and mortor, grind the garlic cloves and ginger until it resembles a sort of paste like consistency. Add a touch of coarse salt can help with the process!

- Add the yogurt, cumin, cayenne, turmeric, garlic, ginger, salt, pepper, lime juice, and tomato paste to the chicken, mixing well to fully incorporate. Set aside for roughly 30-60 minutes while preparing the other ingredients.

- Slice the red onion and cucumber into thin strips.

-If you haven't done so already, prepare the Mint Cilantro Chutney.

- Once the chicken has marinated for at least 30 minutes, arrange it on a baking sheet while maintaining as much space between pieces as possible. This helps achieve better browning.

-Place under the broiler for 15 minutes or until chicken is cooked through and has a brown char on many of the pieces.

- While the chicken is resting, begin heating a large pan or griddle over medium heat.

- Once sufficiently hot (water should boil off fast), use your choice of ghee or olive oil and coat the surface lightly. Place the frozen paratha down, lightly brushing the surface of the paratha with more ghee or olive oil.

- Flip occasionally until cooked all the way through, lightly browned, and a flaky texture has formed. Place them on a plate before giving them a scrunch to release some steam from within the paratha.

- Assemble the rolls with chicken, cucumber, red onion, and the chutney before enjoying!

Notes

Paratha is a sort of flaky flat bread that can be bought frozen in some particular large grocery stores or Indian food marts. If you can't happen to find any, Naan is a perfectly fine substitute. Alternatively, perhaps try making it yourself!
