Baked Feta Pasta

Ingredients

2 pints cherry or grape tomatoes

2 heads garlic

Olive oil

Salt

Pepper

Crushed red pepper flakes

Oregano

Honey

2 blocks feta

2 boxes shell pasta

Shredded mozzarella

Breadcrumbs

Parmesan

Directions

Preheat oven to 400°. Place 1 block feta in center of large foil plan. Around it place 1 head of garlic and half of the tomatoes. Season with salt, pepper, red pepper flakes, oregano, olive oil, and honey. Repeat for the second foil pan.

Bake for 40 to 45 minutes, until tomatoes are bursting and feta is golden on top.

Meanwhile, in a large pot of boiling salted water, cook pasta until al dente according to package directions. Reserve 1 cup pasta water before draining.

Add cooked pasta, basil, reserved pasta water, and some lemon juice to foil pans. Mix well.

Top with a layer of mozzarella cheese, breadcrumbs, and grated Parmesan.

Return to oven until cheese is golden brown. Broil if necessary.
