Crunchy Mediterranean Quinoa Salad

4 servings of quinoa
2 mini cucumbers
2 bell peppers
1/2 a small red onion
1 cup grape tomatoes
1/3 cup Kalamata olives
2 handfuls of arugula
Fresh dill & parsley
Tzatziki: (can buy also)
1 cup Greek yogurt
1 mini cucumber, shredded and drained of excess water
1 tbsp Extra virgin olive oil
1-2 tbsp fresh chopped dill
Fresh lemon juice or white wine vinegar
Salt/pepper
Drizzle Honey or pinch sugar for sweetness
Directions
Combine all ingredients and divide evenly into containers
When ready to eat, add tzatziki and salt. Shake and enjoy
