Lentils with Chorizo (Lentejas a la Riojana)

White onion diced
3 gloves of garlic
One carrot diced
Green bell pepper
Chorizo sausage
Cured bacon/pancetta
2 Roma tomatoes
Spanish paprika
Bay leaf
Lentils 300g
Chicken stock 1L
Olive oil
Directions
Add the garlic and onion to a Dutch oven and soften for 3 minutes.
Add carrot and green bell pepper and cook a further 5 minutes. Season with salt and pepper.
Add sliced chorizo sausage and bacon. Cook for a few minutes.
Add 1/2tsp of paprika and grated tomato, cook down for 3-5 minutes.
Add lentils and bay leaf. Stir and toast lentils for a few minutes.
Add chicken stock and bring to the boil. Reduce heat to medium low and cover. Cook 25-30 minutes until the lentils are cooked. Taste and adjust seasoning as necessary. Serve and enjoy!
