4 cup Cabbage, Beans, Carrot, Beetroot, Brussels or Asparagus chopped or grated
½ cup Coconut Grated
1 Onion medium size chopped
½ tsp Mustard Seeds
1 tbsp Urud Dal
2 Dry Red Chilly broken pieces
1 stem Curry Leaves
1 ½ tsp Oil
½ tsp Turmeric Powder
¼ tsp Cumin Powder
½ tsp Salt
1 tbsp Water
Directions
In a pan, heat oil and allow mustard to splatter.
Then add urud dal and sauté until it turn light brown.
Add dry red chilly and curry leaves.
Continue sautéing for few seconds and then add onion.
When onion becomes soft, add desired vegetable, salt and continue sautéing.
Once it is well mixed, add water and allow vegetable to cook for 8 to 10 minutes.
Add turmeric powder, cumin powder and mix well.
Once raw smell of cumin is gone, add grated coconut and mix well.
Allow coconut to cook for 5 minutes.
Thoran is ready to serve.
