1 Carrot chopped 1 inch long pieces
½ Cucumber chopped 1 inch long pieces
1 Plantain Unripe chopped 1 inch long pieces
2 Green Chilly
1 Drumstick chopped 2 inch long pieces
½ cup Coconut Grated
1 tbsp Coconut Oil
1 tsp Cumin Seeds
1 stem Curry Leaves
3 Shallot small
½ tsp Turmeric Powder
¾ tsp Salt
3 tbsp Water
Directions
In a pressure cooker, mix carrot, cucumber, plantain, green chilly, turmeric powder, salt and 2 tbsp water. Allow to cook until one whistle.
Meanwhile, in a mixer pulse coconut, shallot, cumin seeds and 1 tbsp of water.
Once pressure is released, in medium flame add pulsed coconut mixture and mix well.
Then add curry leaves and stir for 3 to 4 minutes.
Spread coconut oil on top evenly and cover avial to sit for 10 minutes.
Aviyal ready to serve.
