Grilled Curried Chicken, Almond and Cranberry Salad

Ingredients

1/2 cup dried cranberries

3 Tbsp olive oil

1 Tbsp fresh lime juice

1 cup mayonnaise

1/4 tsp curry powder

4 chicken breast filets

1/3 cup almonds sliced and toasted

3/4 cup celery, chopped

1/4 cup cilantro, chopped

Directions

Soak cranberries in warm water for 10 minutes to rehydrate. Drain well and chop. Whisk together olive oil, lime juice, mayonnaise and curry powder. Set aside. Grill chicken, cool and slice. Mix together cranberries, chicken, dressing and remaining ingredients. Salt and pepper to taste.

Notes

Serve with pita pockets or French bread. Hannah loves this dish!!
