Ingredients

2c flour

2 tsp baking powder

1 tsp salt

1/4 tsp baking soda

7 TB UNSALTED butter (cut into pieces and freeze)

3/4 c COLD buttermilk

Buttermilk for brushing

Directions

Preheat oven to 425. Line baking sheet with silpat mat.

Whisk flour, baking powder, salt and baking soda in bowl.

Cut butter into flour mixture w/ pastry cutter until it becomes course crumbs.

Make a week in center. Pour buttermilk and stir just until combined.

Turn out onto floured surface, pat into a rectangle.

Fold in thirds, turn dough 1/2 turn and gather crumbs. Flatten into another rectangle. Fold a total of 3 times.

Roll dough to 1/2 in thick. Using a round cutter, cut dough into disks. Place on silpat mat, press thumb into top slightly and brush with buttermilk.

Bake for about 15 mins.
