Ingredients

◦381g cannellini or navy beans (dried)

◦215g tomato paste

◦50g ginger (fresh, minced)

◦100g garlic (fresh, minced)

◦5g crushed chili

◦5g onion powder

◦5g garlic powder

◦15g smoked paprika

◦230g todo ( or similar easy drinking beer)

◦100g brown sugar

Directions

1. Soak beans overnight, cook beans with a sachet containing 2 head of garlic cut in half, 20 black peppercorns, and 4 bay leaves. Cook beans on low until soft. Remove from heat, discard sachet and season, allow to come to room temp before putting in the fridge. Store beans in cooking liquid

2. in a heavy bottomed pot cook out garlic and ginger in generous amount canola oil. When garlic and ginger are soft add dried spices and toast briefly

3. add tomato paste to pan and cook out over low heat. Add brown sugar and beer.

4. add beans with cooking liquid and reduce over medium low heat until liquid reaches a sauce like consistency.

5. Remove from heat and adjust seasoning if necessary.
