Egg Custard Cups

6 large Eggs, Beaten
1 1/2 cups White Sugar
1/2 teaspoon Salt
2 teaspoons Vanilla Extract
5 cups Scalded Whole Milk( see notes)
1/2 teaspoon Ground Nutmeg
6 drops Yellow Food Coloring
Directions
1. Preheat oven to 325 degrees.
2. Mix together eggs, sugar, salt, and vanilla. Stir well. Blend in the scalded milk. Add 6 drops of food coloring and blend.
3. Pour mixture into custard cups. (8oz each) and sprinkle with nutmeg. Place cups into water bath. (place cups in pan. Fill pan with hot water 3/4 the way up the cup.
4. Place pan in oven. Bake for 50-55 minutes or until a knife inserted near the center comes out clean.
5. Carefully remove pan from oven. Carefully remove cups from pan and let cool.
Notes
To scalded milk heat almost to a boil. Remove from heat and cool to 110 degrees.
