1.5 cups almond flour
3/4 cup sugar
1/4 tsp salt
2 tsp baking powder
1/3 cup canola oil
1 large egg
1/2-1/3 cup almond milk
1.5 tsp vanilla extract
1 cup blueberries, fresh or frozen
More sugar for topping
Directions
Preheat oven to 400F
Prepare wrappers in muffin tray
In a bowl, mix flour, sugar, baking powder, salt
In a separate bowl, mix oil, egg, milk and vanilla extract
Pour wet mixture into dry mixture and mix. Should be pretty thick, don’t over-mix
Fold in blueberries
Pour into molds and sprinkle a bit of sugar on top
Bake 15-20 minutes until slightly golden
