Flourless Chocolate Souffle

Ingredients

6oz dark chocolate

1oz dutch process cocoa powder

1/2 tsp espresso powder

1/2 tsp salt

4.5oz room temp butter

3oz sugar

1/3 cup water

3 room temp eggs

1.5oz sugar

Directions

Soften butter and set out eggs

Preheat oven to 300

Line 4 ramekins with parchment paper, Pam spray all over

Finely chop the chocolate

Add cocoa powder, espresso powder, salt, butter - mix

Sugar and water in saucepan, simmer until dissolved

Pour over chocolate mix, wait 30 seconds, stir

Eggs and sugar into stand mixer, beat until triple volume/ribbony

Fold chocolate in until homogeneous

Divide into ramekins

Place ramekins in high walled dish filled 3/4 with cool water

Bake 60-70min until mostly set slightly jiggly (rotate a few times)

Wire rack until cool

Wrap and fridge 4 hours
