Simple Caprese Salad

Ingredients

  • 1 handful Baby spinach

  • 1 Chicken breast

  • 1 Mozzarella cheese stick

  • 1 Roma tomato

  • 1/4 Cucumber

  • 1 Tbsp Olive oil

  • 1 tsp Soy sauce

  • 1/4 tsp Salt

  • 1/4 tsp Pepper

  • 1/8 tsp Cayenne pepper

  • 1/8 tsp Garlic powder

  • 1/8 tsp Onion powder

  • 1/2 Tbsp Balsamic vinegar

  • Sprinkle of Italian seasoning

Directions

  1. Cut cucumbers into 1/4 coins. Dice tomatoes. Cut mozzarella sticks into mozzarella balls.

  2. Season chicken with salt, pepper, cayenne pepper, garlic powder, and onion powder.

  3. Cook chicken in a small pan over medium heat using olive oil and soy sauce.

  4. Slice chicken.

  5. Place baby spinach, cucumber, tomato, mozzarella balls, and chicken into a bowl. Mix.

  6. Make dressing by adding equal parts olive oil and balsamic vinegar then adding a sprinkle of italian seasoning.

  7. Serve.
