Yogurt with Cucumbers

Ingredients

2 Persian cucumbers

2 cups Greek yogurt or better yet – strained Bulgarian yogurt

1/2 clove garlic, minced

1/4 tsp dried mint

2 tbsp chopped mint

2 tbsp lemon or lime juice

1/2 tsp table salt

1/4 tsp black or white pepper

Directions

If straining the yogurt, place in a cheese cloth and tie to a wooden spoon. Place over a pitcher to strain overnight in the fridge.

Peel and thinly slice the cucumbers. Mix the yogurt with all the other ingredients together in a bowl, stir in the cucumbers, and check for seasoning. It might need a bit more acid or salt. Cover and chill until very cold.
