Crispy Salmon Rice Bowl

⢠1 skinless salmon
⢠Olive oil
⢠Garlic powder
⢠Onion powder
⢠Cayenne pepper
⢠3/4 cup breadcrumbs
⢠1 cup rice (jasmine or sushi rice)
⢠1 TBSP rice vinegar
⢠1 TBSP liquid sweetener (maple syrup, honey, brown rice syrup, etc.)
⢠1 tsp salt
⢠1 cucumber
⢠1 large carrot
⢠1/2 avocado
⢠1 TBSP mayo
⢠1-2 tsp Sriracha (based on spice preference)
Directions
⢠Wash your rice and then cook 1 cup according to package
⢠While the rice is cooking, cut your salmon into cubes and then transfer to a bowl
⢠Mix with olive oil, garlic powder, onion powder, and cayenne pepper (measure with your heart ⹠3)
⢠Then dip each piece of salmon into the breadcrumbs
⢠Air fry the salmon at 400F for 18 minutes
⢠When the rice is done cooking, let cool, and then add in the rice vinegar, liquid sweetener of choice, and salt and mix
⢠Use a peeler to vertically peel the cucumber and carrot into strips
⢠Add rice to a bowl, then add the cucumber, carrot, 1/2 avocado, and cooked salmon.
⢠Top with spicy mayo (just combine 1 TBSP of mayo with 1-2 tsp of sriracha... add more sriracha based on spice preference) and enjoy!
⢠P.S. I also like to add a spoonful of kimchi at the end! It's delish
