Potato Soup - Mom

1 stick of butter
1/2 onion finely chopped
3 cloves garlic
4 cups water
1 1/2 cups ham
6 diced (Idaho or russet) potatoes peeled and diced (or about 18 red potatoes)
1 cup chicken stock or broth
1 tablespoon salt
1/2 tsp pepper
2 cups milk plus 3/4 cup flour mixed in blender in cold milk
3 - 4 more cups of milk

Directions
Melt butter and sauté onion and garlic until tender. Add ham to sauté.
Peel and dice potatoes. Bring 4 cups of water to boil and boil potatoes until tender.(Do not drain.)
Add salt.
Add pepper.
Add chicken broth or ham stock.
Blend flour in 2 cups of cold milk. Then add to soup.
Eyeball 3- 4 more cups of milk. Bring to simmer while stirring and do not scorch.
Serve with some parsley and cheese.
Notes
You can substitute bacon for the ham.
You can substitute more chicken broth instead of water if desired.
