ZEST AND JUICE OF 1 LARGE NAVEL ORANGE
1 TABLESPOON OLIVE OIL
½ POUND CHICKEN TENDERS
Directions
Combine the orange zest, orange juice, and olive oil in a 1 medium baking dish. Add the chicken tenders and marinate for at least 15 minutes and up to 2 hours. Cover and refriger- ate if marinating for longer than 1 hour.
Preheat the oven to 350 •F. Cover the baking dish with alumi num foil and bake for 38 to 40 minutes, or until the chicken is no longer pink when you cut into the fattest tender.
Discard the cooking liquid. Cool the chicken and shred or cut 3 into chunks.
Makes 4 servings
MAKE AHEAD: Refrigerate for up to 3 days.
COOKING TIP: Be sure to wash citrus fruits before zesting.
Notes
Cooked covered in the oven, this chicken becomes almost unbeliev- ably tender. Play with the flavors by substituting one lemon and one lime for the orange.
