Roasted Cherry Tomato Pasta

75g linguini (or any pasta)
20 cherry tomatoes, halved
2 garlic cloves, minced
½ tsp dried oregano
1 tbs extra virgin olive oil
Sea salt and black pepper
Fresh basil
Directions
Toss cherry tomatoes with garlic, oregano, extra virgin olive oil, sea salt and black pepper.
Roast at 180ºC for 30 minutes, or until the tomatoes are collapsing and slightly charred.
Cook pasta according to pack instructions. Reserve a cup of the water when draining.
Mix the pasta into the roast tomato dish, adding pasta water to help combine the sauce.
Top with basil leaves and pepper.
Notes
Tastes best with ripe tomatoes.
Use non-reactive dish for roasting i.e. glass, ceramic.
