Sheet pan breakfast sausage patties

1½ tbsp (23 ml) oil of preference, tor greasing
1lb (454 g) ground pork
½ lb (226 g) ground beef
1 tbsp (2 g) chopped fresh sage
1 tbsp (1 g) chopped fresh thyme
½ tsp fennel seeds
¼ tsp ground allspice
2 cloves garlic, minced
1½ tsp (9 g) sea salt
Directions
Preheat the oven to 375°F (190°C) and grease a sheet pan.
Put the pork, beef, sage, thyme, fennel, allspice, garlic and salt in a large bowl.
Mix the ingredients with your hands until they are well-combined. Divide the mixture into 12 portions. Shape each portion into a ball, then press it down in your palm to flatten it. To prevent the patties from turning puck-like when they are cooked, press your finger down to make a little dent in the center of the patty. This will make the whole patty cook evenly and not shrink.
Arrange the patties on the prepared pan, and bake them for 20 minutes, or until they are deep golden brown.
