Ingredients

  • 1 1/2 cups raw tofu

  • 1/2 clove garlic, minced

  • 1/2 pinch cayenne

  • 1 pinch sea salt

  • 1/4 tsp mustard powder

  • 2 cloves confit garlic

  • 1 Tbsp apple cider vinegar

  • 1 cup extra virgin olive oil

Confit garlic

  • 1 head of garlic

  • Extra virgin olive oil, to cover

Directions

  1. Make the confit garlic – peel all cloves of one head of garlic.

  2. Place peeled cloves into a small saucepan and cover with oil.

  3. Cook on medium heat until the cloves are completely tender and golden (about 20 mins). Leave to cook.

  4. Blend tofu, raw garlic, cayenne pepper, salt, mustard powder, garlic confit, and apple cider vinegar in blender on high speed for 1 min, or until smooth.

  5. Keep blender running on high speed and pour oil into the blender, slowly, to emulsify.
