The Night Before:
2 cups whole milk
388 grams all-purpose flour( 3 cups)
1 1/2 tbsp active dry yeast
IN THE MORNING:
1/2 cup butter melted and
COOLED
1/2 cup sugar
1 egg well beaten
2 tsp kosher salt
1 tbsp cardamom
1/4 tsp mace
¾ cup golden raisins
¾ cup candied fruit heaping
¾ cup currants
414 grams bread flour 3 cups
TOPPING:
1 egg yolk
2 tablespoons sugar
3 tablespoons half and half
Directions
PRHEAT: Bake to 350 and bake on rimless parchment lined pan. For 30 to 35 minutes..
1. Beginning about 4 pm In large bowl place 2 cups milk heated 2 minutes in microwave, sprinkle yeast over. Add 388 grams all-pupoes flour mix well. Cover let sit over night.
2. In morning: in saucepan, melt butter COOL, add to overnight sponge.
3. Add sugar, beaten egg, salt, spices, fruit mixed with some of the bread flour, add just enough more bread flour to make a nice dough. Mix until incorporated, turn out and knead well for a full 10 minutes. Put in sprayed dough box, let rise until double about 1 1/2 hours.
4. Punch down let rise another 45 minutes, then divide into 2 round loaves, weigh grams.
5. Place on parchment lined sheet, cover let rise 45-50 minutes.
6. Brush with beaten yolk, sugar, and half and half.
