Chicken Tacos

- 3 chicken breasts, cubed -
3 tbs taco seasoning -
olive oil -
small corn tortillas -
1/2 red onion, thinly sliced -
Fresh cilantro, chopped -
pico de gallo -
plain Greek yogurt -
1 lime, cut into wedges
Directions
- Heat the olive oil in a skillet over medium-high heat. - Cube the chicken breasts into bite-sized pieces and season them with taco seasoning. - Once the skillet is hot, add the seasoned chicken cubes. Cook for about 7-8 minutes, stirring occasionally, until the chicken is cooked through and lightly browned on the edges. Add in red onion and cilantro. - While the chicken cooks, preheat your oven to 425°F. - Lightly brush each corn tortilla with olive oil. - Add in your chicken and shredded cheese, then fold. - Bake the tortillas for about 7-8 minutes, or until they are crispy and golden. - top with pico, greek yogurt, red onion, cilantro and lime!
