Creamy Rice Pudding

Ingredients

1 1/2 cup water

3/4 cup uncooked long-grain rice

2 cups milk, divided

1/3 cup sugar

1/8 teaspoon ground cinnamon

1/4 teaspoon salt

1 egg, beaten

1 tablespoon butter

1/2 teaspoon vanilla extract

Directions

In a saucepan, bring water to a boil. Stir in rice, reduce heat to low, cover, and simmer for 20 minutes.

In a separate saucepan, combine cooked rice, 1-1/2 cups milk, sugar, cinnamon, and salt. Cook over medium heat until thick and creamy, 18 to 20 minutes. Stir in remaining 1/2 cup milk, egg. Cook 2 to 3 minutes or until it begins to thicken up, stirring constantly. Remove from heat and slowly stir in the butter and vanilla.
