3 heads of garlic
2 tbsp olive oil
Salt & pepper
8 oz cream cheese, softened
1/2 cup Best Foods mayonnaise
1 ½ cups mozzarella, shredded
1 cup parmesan, shaved
1/2 cup fresh parsley, chopped
1/2 tsp salt
Freshly cracked black pepper
1/4 tsp red pepper flakes (optional for spice)
1 baguette, sliced
Olive oil
Sea salt
Directions
Preheat oven to 425 F. Slice tops of garlic heads and discard (leave peels on and cloves showing). Place on a piece of foil and drizzle with olive oil. Sprinkle with salt and pepper then wrap up in the foil. Transfer to a baking sheet and bake for 45 minutes. Let cool for 15 minutes.
Meanwhile, place cream cheese on counter to let soften at room temp. Shred mozzarella, shave parmesan and chop parsley. Set aside.
Once garlic is done, reduce oven heat to 350 F.
Add softened cream cheese and Best Foods mayonnaise to a large bowl. Squeeze the roasted garlic bulbs out of their peels into the bowl. Add in 1 cup shredded mozzarella, 1 cup shaved parmesan, ¼ cup parsley, salt and cracked black pepper. Mix everything together until combined.
Transfer mixture to a baking dish. Top with ½ cup shredded mozzarella and ¼ cup parsley.
Bake at 350 F for 25 minutes, then broil for 3-4 minutes for a golden-brown top (watch carefully so doesn’t burn).
Slice baguette into rounds. Place on a baking sheet and brush with olive oil. Sprinkle the tops with sea salt and place in the oven with the dip.
Bake baguette slices for 5 minutes, flip over and bake for 5-7 minutes more or until golden.
Remove dip from oven and serve warm with toasted baguette slices.
