Ingredients

1 tablespoon extra-virgin olive oil

1 small sweet potato, unpeeled, finely diced

1 small green bell pepper, cored and diced

¼ cup corn kernels, fresh or thawed if frozen

4 eggs, whisked

Sea salt

Freshly ground black pepper

½ cup roasted tomato salsa

Directions

1 In a large skillet, heat the olive oil over medium heat. Add the sweet potato, and cook for 12 minutes, stirring often, until nearly soft.

2 Add the bell pepper, and cook for 5 minutes, until the peppers become slightly softened.

3 Add the corn kernels, and cook for 1 minute.

4 Pour in the eggs, stirring constantly in a circular motion, and cook for about 5 minutes, until the eggs are set. Season with salt and pepper.

5 Top with the tomato salsa to serve.
