Spaghetti Carbonara

Ingredients

8 pieces bacon

1 lb spaghetti

2 eggs + 2 egg yolks

1/2 grated Parmesan or Romano cheese

2-3 cloves minced garlic

Salt and pepper to taste

Directions

1) Chop bacon and fry in stainless steel pan over medium heat. Once crispy, turn heat to low and set pan away from direct heat.

2) Meanwhile boil large pot of water. Once boiling, salt water and add spaghetti. Cook according to package directions. Drain.

3) While spaghetti is boiling, mix eggs, yolks, and Parmesan in large bowl. Add salt and pepper.

4) After noodles are cooked, add garlic to cooked bacon bits. Sauté over low heat for 30 seconds. Add spaghetti noodles and stir to coat. Cook one minute.

5) Add noodle and bacon mixture to bowl with eggs and cheese. Toss quickly to combine and serve immediately.

Notes

Can use pancetta or guanciale
