Mom's Chocolate Cheesecake

1 cup Graham cracker crumbs
1/2 cup melted butter
1 1/2 cups approx chocolate
1 1/2 lbs (3 containers) of cream cheese
1 cup sugar
3 eggs
1 tsp vanilla
1 cup sour cream
6 ounces (3/4 cup) chocolate
3 ounces (just over 1/4 cup) whipping cream/heavy cream
Directions
Crust: (this one I just ballpark and usually it needs a bit more crumbs then that)
1 cup Graham cracker crumbs
1/2 cup melted butter
Mix together and pat down in a 9"-10" springform pan

Melt in a double boiler or stainless bowl over a pot of water
1 1/2 cups approx chocolate (I have done this with expensive chocolate and cheap chocolate both are just as good)
Cool it

Beat
1 1/2 lbs (3 containers) of cream cheese until smooth.
Add & beat slowly after each:
1 cup sugar
the cooled chocolate
3 eggs
1 tsp vanilla
1 cup sour cream
Preheat oven to 350 F and bake for approx 1 hour
Cool it slowly...so at that hour mark shut off heat and open the oven door a bit so it cools slowly. It will probably end up cracking a bit but not as much as if you took it out right away.
Glaze:
6 ounces (3/4 cup) chocolate
3 ounces (just over 1/4 cup) whipping cream/heavy cream
I will usually also add either an orange extra or a bit of booze...creme de mint, triple sec...whatever I feel like at the time)
In a small pot cook together till smooth over a low heat. Pour over the cake before it is completely cool.
Refrigerate.
