Easy Chicken Chow Mein

¼ cup oyster sauce
¼ cup soy sauce
1 tablespoon rice vinegar (or black vinegar)
1 tablespoon brown sugar
1 teaspoon chilli paste, optional
2 garlic cloves, minced
½-inch piece of fresh ginger, finely grated
250g (8 oz) dried fine egg noodles (or dried chow mein noodles)
4 boneless, skinless chicken thighs, diced
1 tablespoon cornstarch
2 tablespoons vegetable oil
1 tablespoon toasted sesame oil
1/2 cup shiitake mushrooms, sliced
1 onion, thinly sliced
1 carrot, julienned or cut into matchsticks
1 cup snow peas, sliced diagonally
1 cup cabbage, thinly sliced
Green onions, chopped, for garnish
Directions
In a small bowl, whisk together oyster sauce, soy sauce, brown sugar, vinegar, garlic, ginger and chilli paste, if using.
Take 2 tablespoons of the prepared sauce and mix it with diced chicken thighs. Add 1 tablespoon of cornstarch to the chicken and toss to coat. Tip: If you have extra time, you can allow chicken to marinate for 15-20 mins.
Cook noodles for half of the time required (see the packaging), usually about 2 minutes. Drain and set aside.
Heat vegetable oil and toasted sesame oil in a large pan or wok over medium-high heat. Add the marinated chicken and cook until it's sealed.
Add sliced mushrooms and onions. Sauté for 3-4 minutes.
Add carrots, mange tout, and sliced cabbage. Stir-fry for a couple of minutes until the vegetables are tender yet crisp and the chicken is cooked through.
Add partially cooked noodles and prepared sauce to the pan. Toss everything together until well combined and heated through.
Remove from heat, garnish with chopped green onions and enjoy!
