MONGOLIAN BEEF

Ingredients

3 tablespoons sesame oil (any kind)

1 white or yellow onion, cut into strips

1 bunch scallions, sliced into 1 inch pieces, divided

6 cloves garlic, minced or pressed

3 pounds flank steak, cut against the grain into ¼-inch-thick strips

1 cup beef broth

¼ cup low-sodium soy sauce, tamari, or coconut aminos

1/4 cup packed dark brown sugar

3 tablespoons cornstarch

3 tablespoons cold water

¼ cup hoisin sauce

¼ cup plum sauce (if you can't find this, just use another 1 cup hoisin)

2 tablespoons molasses

Sesame seeds, for serving

Directions

Add the sesame oil to the Instant Pot and hit Sauté and Adjust so it's on the More or High setting. After 3 minutes of heating, add the onion and half the scallions and sauté for 3 minutes, until softened. Add the garlic and sauté 1 minute.

Add the beef and sauté for 3 minutes, until lightly browned at

the edges.

Add the broth, soy sauce, and brown sugar and stir well. Secure the lid and move the valve to the sealing position. Hit Cancel and then hit Pressure Cook or Manual for 12 minutes on High Pressure.

When done, allow a 5-minute natural release followed by a quick release.

Meanwhile, make a slurry by mixing together the cornstarch and cold water in a small bowl until smooth.

Hit Cancel and then hit Sauté and Adjust so it's on the More or High setting. When the sauce bubbles, add the cornstarch slurry while constantly stirring. Let simmer for 30 seconds, then hit Cancel to turn the pot off. The bubbles will die down and the sauce will thicken up nicely.

Add the hoisin sauce, plum sauce, molasses, and most of the remaining scallions and stir until all is combined. Allow to rest for 5 minutes for the flavors to come together. Serve topped with the remaining scallions and sesame seeds, if desired.

Notes

For crispier beef: After transferring all the beef and sauce to a serving dish return however much beef you'd le to crisp back to the pot. Add the air fryer lid, hit Broil (400°F) for 10 minutes, and hit Start.
