Honey-Glazed Chicken

Vegetable oil cooking spray
1/4 cup soy sauce
1/4 cup honey
1/2 teaspoon garlic powder
1.5 teaspoons dry mustard
1/2 teaspoon lemon juice
1/4 teaspoon pepper
6 bone-in, skin-on chicken breast halves
Directions
Coat the grill rack with vegetable oil cooking spray.
Prepare a charcoal grill to medium-high heat (350°F to 400°F) with the rack 4 inches from the coals.
Combine the soy sauce, honey, garlic powder, dry mustard, lemon juice, and pepper in a small bowl and stir to thoroughly combine. Set aside.
Place the chicken on the rack over medium-hot coals and grill, uncovered, 6 to 8 minutes per side.
Baste the breasts with the sauce and grill 20 minutes more, basting and turning until the juices run clear when the chicken is pierced with a knife.

Dolly says: "There were always dozens of chicken dishes at our church suppers, but I always darted for this one because I loved the taste of sweet honey stuck to the chicken skin. There was one woman in particular whose glazed chicken was indescribably good, and like most respectable Southern cooks, she would never give me the recipe. I've tried to re-create it over the years, and this is pretty close. Darn close, I promise."
