SEITAN
Vital Wheat Gluten 250 g
Water 275 g
Salt
Pepper
SAUCE
Olive Oil
Garlic
Passata 750 g
Mozzarella 1
Parmesan
Basil
Parsley
Oregano
Directions
PREP
Mix the Vital Wheat Gluten with Water, Salt and Pepper.
Kneed and form into a Dough.
Cut the dough and form it into thin slices.
Steam the Seitan Slices for 40 min.
COOKING
In a pot heat up Olive oil.
Add the Passata, put on the lid and let cook.
In the meantime
In a pan heat up Olive Oil.
Cut the Mozzarella in slices and drain out excess water.
Sear the Seitan Slices and season with Salt, Pepper and Garlic Powder.
Season the Sauce.
Add in the Seitan slices.
Top the Seitan with Parmesan and the Mozzarella slices.
Cover and cook for 15 min.
Notes
The Seitan will swell considerably after steaming.
