2 tablespoons butter
2 scallions, green and white parts, chopped
1/4 pound ham, diced
1/2 pound bacon, cooked, drained, and crumbled
1 cup sour cream
3 large eggs, beaten
1/2 pound Swiss cheese, grated
Salt and pepper
1 (9-inch) deep-dish pie shell, thawed if frozen
14 cup slivered almonds
Directions
Preheat the oven to 375°F.
Heat the butter in a small skillet over medium heat. Add the scallions and sauté until soft and translucent. Set aside to cool.
Combine the ham, bacon, sour cream, eggs, and cheese in a large bowl. Add the scallions and mix until thoroughly incorporated. Season with salt and pepper.
Pour the egg mixture into the pie shell and scatter the almonds on top. Bake until the quiche is firm and golden, about 40 mintues.
Notes
Dolly says: "This is one of those dishes that I always find tastes better when someone else makes it. And that someone else has to be my friend Molly, who has just the right mix of eggs and ham and bacon down in this ham-and-egg pie. She's famous for it, which makes it easy for her to decide what to bring to a gathering, because it's an easy dish to transport from the house to the car to the party. It's just as good cold as it is warm--sometimes I eat it the next day for breakfast."
