Thanksgiving Recipes Episode 3: Dinner Rolls

I wanted you guys to have rolls that would go great with both sweet and savory tastes. My recipe is also very forgiving, making it great for newer bakers. Recipe below🫶🏼
Ingredients for the bread rolls:
2tbsp rapid rise yeast (about 3 of the packets) make sure it is not expired!
4 cups flour (with a few tbsp extra)
1/2 tbsp salt
1/2 cup sugar
1 & 1/2 cups milk
1 egg (room temperature)
6tbsp butter (room temperature)
HONEY CINNAMON BUTTER:
mix together one stick (1/2 cup) partially melted butter, 1tbsp honey, 1/2 tbsp cinnamon, 1/2 cup powdered sugar
to partially melt the butter, slice it in 4 parts and microwave for 15-20 seconds
I rigorously mixed everything with a spoon until it became a thick whipped consistency
SAVORY GARLIC BUTTER:
mix together half a stick of melted salted butter, 1tbsp minced garlic, and 2tbsp minced parsley
unsalted butter is fine just add 1/2tsp salt
brush over the rolls and top with flaky salt to your preference!
Directions
You do not need a stand mixer for this recipe. you can knead by hand. It will likely take 10-15 minutes to knead by hand.
In a large bowl, add in all of the listed ingredients for the rolls, but start with only 3 cups of the flour. **You need warm milk to activate the yeast, so just pop the milk into the microwave for about 50 seconds before adding it in.
Start kneading the dough. If you are using a stand mixer, you will use the dough hook and start at the lowest setting for 2-3 minutes. Make sure to scrape the sides and the bottom in between mixing to prevent clumps from forming.
Once the ingredients have mostly combined, add in another half cup of flour. Mix again on the lowest setting for a minute, then go up to medium for 1-2 minutes.
Add in another half cup of flour, and repeat the process of mixing from low to medium speeds.
After a few minutes, a dough ball should form. If its still really sticky, add in flour a tablespoon at a time and keep mixing. Sometimes you just have to knead it a little longer to make it less sticky.
Your dough should be slightly sticky when its done. The amount of flour you’ll need will vary depending on the climate you’re in. For me, I only needed 2 extra tablespoons of flour.
Put the dough ball into a large greased bowl, and cover with a towel. Let it rise for 30 minutes. (I put mine in a warmer area, like next to a lamp or inside the microwave)
After 30 minutes, the dough should have risen and you can punch it down. Prepare a large greased baking dish (mine is 9x13)
Form equal sized dough balls, my recipe generally makes 20-22 rolls. You can use a kitchen scale to measure them. Mine came out to about 50 grams or 1.75oz. If you do not have a scale, each roll should be about the size of a small lime.
Once you have put all your dough balls together on the baking dish, cover them with a towel again and let them rise for an additional 30 minutes.
After they have rose for the second time, put them into the oven at 375 degrees for 16 minutes. Everyone’s oven and climate is different, so keep checking them after 12 minutes.
The rolls do not require an egg wash. you will see them naturally turn a golden brown on top when they are ready.
Brush them with some melted butter when theyre fresh out the oven. Allow them to cool for 20-30 minutes before enjoying to allow the steam to make the insides super fluffy. The rolls will soften as they cool.
Enjoy with either the sweet, or savory butters :)
This recipe is so easy and only takes me 15 minutes of actual prep time (not rising time)!! I hope you guys love it!!
