Loveless Cafe Cucumber and Onions

3 large garden cucumbers, sliced 1/4 inch thick (leave the peels on)
1 small yellow onion, sliced 1/4 inch thick
1 cup apple cider vinegar
1/2 cup sugar
1/2 teaspoon salt
1/4 teaspoon celery seeds
Directions
Combine the cucumbers and onion in a medium bowl and set aside.
Combine the vinegar, sugar, salt, and celeery seeds with 1/3 cup of water in a small pot.
Simmer over medium-low heat just until the sugar dissolves (do not boil).
Remove from the heat and let cool. Pour the vinegar mixture over the cucumber mixture and stir gently to coat.
Cover with plastic wrap and marinate in the refrigerator at least 4 hours. Serve chilled.
Notes
Dolly says: "This is the perfect side dish with the cafe's Watermelon Ribs, page 36. I use the marinate for other vegetables, too, just the way my Mama used to put almost anything in pickling juice."
